Take him for every Shekel he has! And while you're at it, sue all the Rabbis who procured a miscarriage of justice and the Judge who is "bought"/influenced.

good for him. Hopefully, he will get as much money as he can from this well connected family of the yeshiva student so that no one will think they can just hurt someone with no consequences.

This would seem to be actionable in beit din. But is there a beit din in Israel that would be fair to Noga Zoraish?

There seem to have been problems on both sides by certain accounts. Do not have excessive sympathy for her simply because she is an Ethiopian immigrant. There should have been a manager around she could have called if there was a problem. According to one account she and the convicted man were arguing for 20 minutes. This is ridiculous on both sides. The Israeli legal system is screwy enough already without encouraging vengeance lawsuits.

She deserves sympathy for being the victim of a violent assault. The perp deserves no sympathy at all. The facts remains that he deliberately ran her down with his car, fled the scene and then lied to the court about it. There are not two sides to this story. The woman was concienciously doing her job when she was assaulted with a deadly weapon. If it had happened in New York his would have been sentence would have been 5-15 years of which he would have had to serve a minimum of three years hard time. The woman deserves to collect every penny that the guy or his family ever earn.
